Parellada
Normally used with Macabeo (Viura) and Xarel.lo in the Catalunya area for the production of Spanish sparkling wines or Cavas. Potentially it is a very high quality Catalan variety, which can produce a fine, aromatic and refreshing wine. Low yielding in poor somewhat cold climates, it then produces crispy, perfect balanced wines with sufficient acidity to last. Unfortunately in the lower Penedès region where its is widely planted, the fertility of the land implies high production and rather dull wines only suitable for mixing. Very resistant to plagues, specially rot, in its quality variation it is well suited for barrel fermentation and oak ageing.
