Featured Varietal

Muscadine

A species of native American vines that were first discovered by European explorers, who found them growing along the low lying Southern coastal regions. Most Muscadine wines (reds and whites) are blends, usually given proprietary names by the winery (e.g., "Vintners' Blend"), and vinified in the sweet or semi-sweet style. Muscadines and blends are usually sweet and foxy (a unique aroma/flavor profile variously described as wild and musky).

DiStefano Winery

he winery does not own it's own vineyards, but relies on long term relationships and contracts with existing well known vineyards. Our relationship with the vineyards is changing from receiving tonnage (grapes) to controlling the vineyard and working with the vineyard manager(s). Having the ability to control the acreage allows us to ensure quality of the harvest. Our target tonnage for red wine is 2.5 to 3 tons per acre. Our target approach where possible is to trellis the vines with parallel shoot positioning (vertical), with no cross over, 5 to 6 shoots per side, 18 to 24 clusters per plant, 6 pounds per vine. This approach allows for controlled tonnage on a balanced plant without excessive dropping of fruit to achieve the target tons per acre. Picking is determined by daily monitoring of the vineyards during harvest. Picking is determined by taste, sugars and TA with the intent of picking grapes at physiological maturity and maximum flavor. Target sugars are 23.5 to 25.5 brix (13.1% to 14.2% alcohol). All reds are hand picked, and transported in small boxes or bins preventing any juicing during transportation.
