The grapes were fermented warm, and had a full 10 days of maceration to extract as much color and flavor as possible. At the end of fermentation the grapes were lightly pressed, settled and then racked into barrels. Every barrel was tasted and only the finest went in to this blend. For those who doubt the quality of red wine from ID: one sip of this wine should make believers out of them. This is an outstanding wine. The wine has lots of dark cherry fruit, good acidity and a full bodied structure. It should age well and is well suited to grilled red meats.
