Fieldbrook Winery About the winery . . . The Fieldbrook Winery, just inland from the Pacific coast in Northern California, is 30 miles south of Redwood National Park, where you find the tallest trees in the world. This same cool, even climate that produced these giant redwood forests is ideal for the natural fermentation and aging of premium varietal wines. The grapes for our wines come from select vineyards in Trinity, Humboldt and Mendocino counties. Vineyards are chosen which represent both varietal identity and regional character. Because our effort can only reflect the quality of the grapes in the vineyard, we place the grape grower's name on our label to recognize their contribution in bringing these wines to your table. The winery normally produces about 1000 cases per year. Though small, the winery has earned distinction by winning many awards in state and national competitions.

  Barbera Mendocino County Fox Hill Vineyard
The wine has good acid and berry like aromas, muted only slightly by oak vanilla.
  Cabernet Sauvignon, Mendocino County
The Elizabeth lot contributes cassis and cherriy aromas whereas the Ravano wine adds structure. Together, the blend seemed to have better balance than the individual components
  Chardonnay Humboldt County, Viale Vineyard
Although the malolactic fermentation was complete, the wine does not display the buttery diacetyl character often associated with complete malolactic fermentations. We made two chardonnays this year: one from Trinity County and this one from Humboldt County. The Viale chard has more mineral notes than the wine from Trinity County.

  Piccola, Mendocino County Fox Hill Vineyard
Delicate aromas of honeysuckle and lilac. The wine was "finished" at 0.5% residual sugar, just above the threshold of "sweetness." A slight amount of naturally dissolved CO2 was maintained during bottling to enhance the fresh floral character.
  Pinot Noir Humboldt County Phelps Vineyard
This wine has wonderful perfume, the trademark of a great Pinot Noir. It has been a truly enchanting experience to see this wine mature. As noted above, the wine was removed from new oak to permit the inherent fruit character to develop and dominate.
  Sangiovese, Fox Hill Vineyard Mendocino County
Our 2003 Sangiovese is from the Fox Hill Vineyard, located on the East side of the Ukiah Basin. This Sangiovese is from the Brunello clone originally from Montalcino, Italy and is slightly more aromatic that what we have made in the past. A protion of this wine was also used to produce our il montaggio Super Tuscan blend.
  Sauvignon Blanc Redwood Valley Elizabeth Vineyard
Our process with these grapes is to gently press the juice while monitoring pH. Each year, after the free run, we press lightly for two cycles in our new bladder press. When the pH begins to climb, we stop pressing. Although the pommaceis quite wet and could have supplied more juice, we cart it off to our garden! It should produce great potatoes! The juice is then chilled and the settled juice transferred to another tank for cold fermentation which lasts five to six weeks. When the residual sugar reaches about 0.5%, we turn on the chiller to stop the fermentation. At this point, the wine is transferred to neutral oak where it begins to age on its lees, stirred weekly. This wine was bottled in early Spring.
