Stag's Leap Wine Cellars Stag's Leap Wine Cellars is a private Napa Valley estate that has been owned by my family since we established the winery in 1972 in what is now known as the Stags Leap District. We are best known for our three estate-grown Cabernet Sauvignons, CASK 23, S.L.V. and FAY, which are among the most highly regarded Cabernets in the world.   ARCADIA VINEYARD Chardonnay
The 2005 ARCADIA VINEYARD Chardonnay opens with a gorgeous bouquet of orange blossoms, lemon grass, and wildflower honey. This inviting perfume is enriched with flavors of spiced apples and pears laced around a flinty core. The wine has a bright, juicy entry with expanding roundness on the mid-palate, finishing with a dancing lightness and lingering sensations of citrus and vanilla spice. It’s an excellent companion to herb-crusted salmon on a bed of mesclun, chicken saltimbocca with lemon sauce, or as an aperitif with Epoisse, the traditional Burgundian cow’s milk cheese.
  ARTEMIS Cabernet Sauvignon
A perennial favorite on restaurant wine lists, ARTEMIS is generous in flavor and velvety in texture. Aromas of cassis and caramel rise and give way to earthy notes of black olive, black pepper, and truffles. Classic flavors of cassis and black cherry fill the mouth as notes of violets and vanilla linger on the finish. Enjoy this wine with braised short ribs on a cold winter’s night or with a porcini and gorgonzola burger for you gourmet grillers.
  CASK 23 Cabernet Sauvignon
Still in its youth, this wine reveals extraordinary depth and finesse beginning with rich cassis and blackberry aromas that are warmly blanketed in notes of toffee and vanilla. Savory aromas of rosemary, truffles, and cocoa powder reward those who linger over the bouquet. Take a sip, and discover a core of dark berry, cassis, and cherry fruit flavors amid notes of vanilla, dark chocolate, and espresso. Silky, supple tannins carry this wine into a long, fruity and gratifying finish. Enjoy it with a prime rib roast with Cabernet jus or with venison chops with blackberry compote.
  FAY Estate Cabernet Sauvignon
A beautiful perfume of violets, dark cherry, and licorice introduce the 2004 FAY Cabernet Sauvignon and lead the way to luscious flavors of plum, chocolate, and candied ginger, with savory notes of sandalwood and tobacco. Soft, juicy tannins and a silky-smooth mouth feel are a hallmark of this wine, rewarding those who enjoy it in its youth as well as those who will enjoy it after many years in the cellar. For a heavenly pairing, try this wine with cinnamon spiced quail, or rosemary leg of lamb.
  KARIA Chardonnay
Inviting aromas of white peach, apple, spiced pear, and citrus join with floral notes of honeysuckle and roses to create a beautiful bouquet. The fruity aromas carry over to the palate and marry with a subtle creaminess and a touch of warm brioche. This delicate richness makes the 2006 KARIA Chardonnay a versatile wine at the dinner table. Try it with chicken piccata, corn risotto, or a warm goat cheese salad.
  Napa Valley Merlot
Vibrant red fruit aromas of cranberry, raspberry, and strawberry rise from the glass and mingle with spicy notes of cardamom, anise, and vanilla. Similar flavors weave across the palate along with bright red plum and nutmeg. Soft, subtle tannins create a silky entry and medium weight to this well balanced wine. Enjoy the 2005 Merlot with a pork tenderloin in pomegranate sauce or, for more casual fare, try it with a prosciutto and brie panini.
  Napa Valley Sauvignon Blanc
Bright and lively on entry, smooth and fruity on the mid-palate, and refreshing on the finish. This wine awakens the senses with aromas and flavors of ruby red grapefruit, mandarin orange, guava, and Comice pear. Enjoy this wine with fish ceviche or a Thai-style chicken and shrimp noodle salad. Better yet, enjoy a glass poolside or sitting on the patio with friends watching the sun go down.
  Rancho Chimiles Sauvignon Blanc
Fresh aromas of grapefruit, lime and lemongrass with hints of guava follow through on the palate in this refreshing and light bodied Sauvignon Blanc. There is a fruity sweetness to the wine (although it is technically dry) as the citrus-spiked flavors interplay with ripe honey dew melon and notes of wild honeysuckle. Try this wine with grilled yellowfin tuna steaks and a citrus-cilantro salsa, or angel hair pasta tossed with shrimp and fresh asparagus.
  S.L.V. Estate Cabernet Sauvignon
Restrained but complex in the nose with black cherry fruit laced around notes of sandalwood, truffles, and nutmeg. The wine is firm and concentrated on the palate with flavors of warm raspberry and black cherry alongside spicy accent notes of licorice, cola, and cedar. The mouth-filling flavors are intense, but without excessive weight. Refined, earthy tannins are framed by bright acidity. The wine continues to gain depth and persistence with time in the glass, as it will in the bottle. This firmly structured wine is just the right complement to a meal of smoked sausage cassoulet or pan-seared steak with a wild mushroom ragout.
