Pheasant Ridge Vineyards

Pheasant Ridge Vineyards Located on a ridge overlooking Butternut Creek, Pheasant Ridge Vineyards is dedicated to hand making premium wines in the tradition of the small farm wineries of Alsace and the Rhine river valley. Our wines are specially crafted to be taken with food and good company. Our winery has grown out of many years of experience of making wines for our families. Both John Sustare and Kent Wells have produced grape and fruit wines over the past 30 years for family consumption.

Directions
FROM SYRACUSE: From Syracuse take 690 East to 481 south. Proceed south on 481. Exit 481 at exit 2, Jamesville. Turn left on Jamesville Road and proceed south 3 miles on Jamesville Road (North Street) to the intersection of North Street and state route 173(Old Seneca Turnpike). Turn left onto route 173 and turn right after 200 meters onto state route 91 south. Proceed on state route 91 south for 3.5 miles to the intersection of 91 and Ransom Road. Turn right onto Ransom Road and proceed 1.5 miles to Pheasant Ridge Vineyards. The winery is on the left and there is a large sign at the driveway. FROM THE SOUTH (CORTLAND): Take Interstate route 81 north to the LaFayette exit. Turn right on U.S. route 11 and turn left onto U.S. route 20 (at stop light). Proceed on route 20 approximately 2 miles to the intersection of route 20 and Apulia road. Turn left on Apulia road and proceed approximately 5 miles to Palladino road, 200 meters past concrete plant. Turn right on Palladino road and proceed to the dead end onto Ransom road. Turn right on Ransom road and proceed 1 mile to Pheasant Ridge Vineyards. The winery is on the left and there is a large sign at the driveway.

  Chardonnay
Made from Chardonnay grapes grown on very old vines with the crop loads reduced to enhance flavor. It is our mission to bring you wines with as much flavor as possible and it is an expensive process. This wine was fermented in stainless steel tanks and bottled early to preserve its exceptional fruitiness and varietal flavor. It has 12% alcohol by volume and is not aged with oak. This produced an exceptionally drinkable new wine which will only get better with age. We think this wine is exceptionally good with seafood and vegetarian dishes. It is also one of those wines which go will with itself!
  Dry Cerise (cherry wine)
Our dry cherry wine is made from sweet cherries and has a unique flavor derived from them. Great for picnics and summer outings of any kind. The dry cerise works well with lighter fare. Great for picnics and summer outings of any kind.
  Dry Golden Pheasant Wine
A light and breezy blended wine, Golden Pheasant is as much at home being sipped on the deck as at the dinner table. A perfect compliment for light summer fare. Goes particularly well with vegetables and the pre-barbeque snack!
  Glitterati
Glitterati 2005 is one of our particular specialties; a methode champenoise sparkling wine made from Chardonnay grapes. The wine is first made still and bright. Then it is fermented again in its heavy bottle. The yeast is the shaken down to the top (a three month process of daily shaking the inverted bottle by hand). The yeast is frozen in the neck of the bottle and then removed. Still wine is then added to top off the bottle. It is nice and bubbly and we recommend it for all celebrations public and private. We have been known to celebrate sundown.
  Les Deux Freres
Our version of the famous dessert wine from Oporto Portugal is made from the Norton grape, fortified with grape brandy, and aged with oak. It has 10% residual sugar, but due to the acidity and flavor of the wine, sweetness is not the first thing one notices when tasting this wine. A great after dinner wine, with or even replacing dessert. It is also makes a fine apertif.
  Merlot
This is a quality oak aged red wine from Merlot grapes. It has robust flavor, particularly from the oak aging process, and is best enjoyed with a spicy roasted pork loin or fillet Mignon. Although the wine is in its youth, it is marvelous with all kinds of strongly flavored foods and cannot be overpowered. Since it is still a young wine it should be opened 30 to 45 minutes before drinking
  Semi-sweet Cerise (cherry wine)
A Pheasant Ridge specialty, our cherry wine is made from sweet cherries and has a unique flavor derived from them. This is not a fruit flavored white grape wines. There is no grape wine in it. The semi-sweet Cerise complements dessert perfectly.
  Sweet Golden Pheasant Wine
A light and breezy blended wine, Golden Pheasant is as much at home being sipped on the deck as at the dinner table. Traminette and cider, it is a perfect compliment for light summer fare. Goes particularly well with vegetables and the pre-barbeque snack!
  Traminette
A product of the Geneva New York research station ís grape breeding program, the Traminette grapeís parentage includes the Gewurtztraminer grape from Alsace. The resulting hybrid is more winter hardy than the Gewurtztraminer parent. If Traminette is grown correctly with a lot of sun on the fruit, the wine made from it is indistinguishable from Gewurtztraminer with its spicy fruitiness. In the wine making process we hold this grape overnight (after crushing and destemming) before we press it. As a result the wine has a deep yellow color reminiscent of the grape ís skin color and has enhanced varietal characteristics. This wine is great alone and with seafood and chicken dishes. I especially like it with elaborate chef salads. Made with certified organically grown grapes.

Norton Wine Review: I am just as surprised as you may be to find that a Norton grape (Vitis aestivalis) is being grown in the far north extremes of NY state. But in this case we found Pheasant Ridge producing a delightful Norton Port. All I can say to you is start your engines and race to their winery to get this limited produced specialty. What a delightful sweet after dinner drink or apertif.
