  Dry Blueberry Honey Wine
A beautiful light rosè is the color of our Dry Blueberry Mead. Equally enchanting is the floral aroma you are treated to with each glass. Reminiscent of fresh gardenias, this mead will take you back to a blueberry field in full Spring bloom. The taste is delicate, yet full, well balanced with a fresh floral flavor only achieved by combining the just-picked blueberries with that coveted Indiana wildflower honey.
  Dry Mead
This traditional Dry Mead is light straw in color. It possesses a delicate spicy fruit aroma, with a slight clove note. The flavor is light on the tongue, showing subtle honey character wrapped in a straw finish. Clean, dry and delicate; this is a true mead-lover’s mead.
  Dry Peach Honey Wine
Combining tree-ripened, freshly picked Indiana peaches with our Indiana wildflower honey has resulted in a clear, light straw colored mead. The aroma is 100 percent fresh peach, with just a hint of vanilla in the background. The flavor is subtle tart peach, clean and fresh. Allowing this Dry Peach Mead to ferment to complete dryness allows the true characteristic of the fruit to come through in this delightful fruit and honey wine.
  Dry Red Raspberry Honey Wine
This variety is our star: a vibrant ruby red, practically glowing in the glass. The aroma says “Hello, Raspberry!”. You simply do not get any fresher than that without eating a handful of the berries themselves. A subtle rose petal note plays off of the sparkling freshness of the raspberry. Add a bit of straw, and you have New Day Meadery’s Dry Red-Raspberry Mead. The flavor is bright raspberry, pleasantly acidic with a hint of tart pie cherry to lend complexity. The fresh fruit taste lingers just long enough and leaves you with a fresh, clean finish.
  Semi-Dry Mead
A slightly sweeter version of our Dry Mead, our Semi-Dry Mead possesses the characteristic lightly clouded straw color. The aroma is more pronounced, showing the sweet notes of honey-dew melon and spice unique to East-central Indiana wildflower honey. The flavor is, too, slightly sweet with a pleasant honey flavor. The additional honey used in this variety provides a richer body and lingering sweetness that compliments the mild acidity and makes for a very enjoyable mead.
  Semi-Sweet Plum Honey Wine
Due for public release in Fall 2006.
