Products

Claros – Texas Hill Country ,
The fruit for this wine was hand-harvested as whole clusters in the early hours of the morning when temperatures were low enough to preserve varietal intensity in aromas, flavors and color. The 2003 fruit was of excellent quality with well colored small, ripe berries. At the winery we destemmed a portion of the fruit as whole berries crushing the balance on top to achieve additional complexity by the inclusion of some carbonic maceration. Once inoculated, the must was plunged by hand several times a day until maximum color and flavor was achieved, in small open top fermentors. From the small fermentors, the fruit was transferred to a basket press, and pressed into new French oak barriques. The wine was racked over a 18 month period prior to bottling. Claros is bottled, unfiltered, in antique green Burgundian 750 ml punted bottles.
Scheming Beagle Port – Texas Hill Country
This port was harvested from hand selected parcels of fruit allowed to naturally attain high sugar (Brix) levels from our estate vineyard. Hand-harvested as whole clusters in the early hours of the morning when temperatures were low enough to preserve varietal intensity in aromas, flavors and color. This delicious basket pressed port has dried fruit notes, dark plums, blueberry and spice. The finish is long and complete. Port of the year 2003
